The kitchen knives from our KYOTO series, featuring ultra-sharp blades crafted from German NC62 NanoCarbide steel, are the perfect choice for both professionals and home chefs. NC62 steel, the German counterpart to Swedish AEB-L steel, is regarded as one of the best materials for kitchen knives. Whether peeling, chopping, or slicing meat, fish, vegetables, or herbs—these versatile knives impress with exceptional sharpness and superior ergonomics.
N62 NANOCARBIDE-STEEL
The NC62 steel, developed for razor blades, offers an extremely fine metal structure and an impressive hardness of HRC 60-62—well above the standard in this price range. Thanks to CRYOMAX ice-hardening at -196°C, the blade is exceptionally corrosion-resistant and durable despite its high carbon content.
ONLY THE BEST PART OF THE STEEL
Our NC62 steel is refined using the IngotForge process. After casting into blocks, impurities are removed, leaving only the 'filet' of the steel. This steel is forged into strips with massive hammers, which reduces the carbides and results in an even finer microstructure—significantly superior to the conventional continuous casting process.
LONG LASTING SHARPNESS
The fine-grained microstructure and evenly distributed carbides of NC62 steel, combined with its high hardness, make this steel truly exceptional. This ensures that even at very acute edge angles, the blade retains its sharpness for an extended period—without chipping.
EXTRA-THIN GEOMETRY
The convexly ground blade, combined with a fine satin polish, minimizes cutting resistance and delivers an exceptional sharpness experience.
ERGONOMIC HANDLE
The Micarta handle is dimensionally stable, durable, and optimally balanced. It fits perfectly in the hand, ensuring fatigue-free cutting—even during extended use.
OPTIMAL HANDLING
All edges of the knife are rounded. Even with intensive use in the pinch grip, no pressure points develop on the hands.
NON STICK-EFFECT
The traditional Tsuchime hammered finish reduces food sticking to the blade. The characteristic impressions are incorporated during the manufacturing process, giving the knife not only a unique appearance but also functional advantages.
LONG LIFESPAN
Thanks to SafeWeld technology, the hard blade material is securely bonded to the more flexible stainless steel at the bolster and handle. This ensures lifelong durability, free from material or workmanship defects.
